Marble is a metamorphic rock — limestone that's been transformed by heat and pressure deep underground, recrystallizing into the dense calcite (or occasionally dolomite) structure that gives marble its signature veining and soft luminosity. That same calcite is the source of both marble's beauty and its most talked-about limitation.

Marble measures 3 to 5 on the Mohs scale — noticeably softer than granite or quartz, and softer than a typical kitchen knife. That means it scratches more easily, and because calcite reacts chemically with acid, contact with lemon juice, vinegar, wine, or tomato sauce can leave a dull "etch" mark, which is a different phenomenon than a stain and can't be wiped away. Many homeowners choose a honed (matte) finish specifically because it hides both scratches and etching far better than a high-polish finish does.
